Black and White Truffles

I also made this delightful truffles for Christmas! With Valentine's coming up, they just might be scrumptious too!

1 pound Oreos
8 ounces cream cheese, softened
36 ounces white chocolate, almond bark
1/2 cup semisweet chocolate chips
1/2 teaspoon vegetable oil

Line 2 cookies sheets with waxed paper. Smash cookies until consistency of crumbs. Stir crumbs and cream cheese until well blended and mixture is like dough consistency. Chop 8 ounces of chocolate. Add to dough. Roll dough into ball-like; place on cookie sheets. Freeze for 30 mintues. Melt chocolate until smooth. Remove half balls from freezer. Coat balls. Let stand and dry. Melt chocolate chips and oil in bag. Drizzle over truffles. Chill 30 to 45 minutes until chocolate sets. Store in refrigerator.

Pumpkin Chocolate Chip Cookies

So when we got married, I received a Lion House Desserts cookbook.... until this last week I hadn't cracked it open!!! Now, I think I am going to try every single recipe I can find! I was a little stunned and amazed when even my boys were asking for seconds.... these are great around this time of the year!

3/4 cup granulated sugar
3/4 cup brown sugar
3 1/2 teaspoons pumpkin pie spice
1 1/2 cups pumpkin, canned
3/4 cup oil
7 eggs
2 teaspoons baking soda
2 teaspoons baking powder
3/4 teaspoon salt
4 1/2 cups flour
1 1/2 cups chocolate chips
1/2 cup walnuts, chopped

Heat oven to 350. Mix together sugars, pumpkin pie spice, pumpkin, oil and eggs until well blended. Blend baking soda, baking powder, salt and flour; combine with pumpkin mix. Mix together until well blended, then add chocolate chips and walnuts. Drop by spoonfuls on a cookie sheet lined with wax paper or a well-greased pan. Bake for 8 minutes. Makes 5 dozen.

Taffy Apple Cookies

This recipe is so yummy! My only adjustment is to cut up the dried apples really small! 

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup packed light brown sugar
1 1/2 cups butterscotch morsels
1 cup dried apples
1/2 cup butter, softened
1/2 cup chunky peanut butter
1 egg
1 cup caramel candy, apple topping
1/2 cup chopped peanuts

Heat oven to 350. Beat butter and peanut butter at medium until smooth. Add egg and dry ingredients; beat well until blended. Drop by rounded spooinfuls 2 inches apart onto ungreased baking sheets. Bake 8 to 10 minutes or until edges slightly brown. Cool cookies 2 minutes on cookie sheets. Remove to wire rack; cool completely. Spread 1 teaspoon caramel apple dip on each cookie. Sprinkle with chopped peanuts.

BYU Cookies

One of my good friends gave me this recipes! And they are the easiest cookies without any actual baking ever!

1/2 cup cocoa
1/2 cup skim milk
2 cups sugar
1/2 cup shortening
1/2 cup peanut butter
3 cups oatmeal
1 teaspoon vanilla

Boil cocoa, milk, sugar and shortening for one minute. Remove from heat and add peanut butter, oatmeal and vanilla. Mix well. Drop by spoonfuls onto wax paper. Let set overnight.

Homemade Oreos

This recipe is a big hit in my house... and is oh so easy!!!! Thanks to my merrie miss leader who shared this awesome recipe! I don't make it very often because it can add inches to your thighs... so beware!

1 box Devils Food cake mix
1 egg
2/3 cup shortening
Cream cheese frosting (I make my own! Recipe will follow!)

Mix cake mix, egg and shortening together until completely combined. With scoop, evenly scoop dough in pairs and spread on cookie pan. Cook at 325 for 6 to 8 minutes. Let cookies cool. Then spread frosting on one cookie... add a second to make a sandwich.

Note: I usually store these in the fridge so that the frosting hardens.

Fudge Striped Cookie Salad

This recipe is a great summer dessert salad. It is really simple.

1 package crushed fudge striped cookies
1 can mandarin oranges
1 container of (vanilla)yogurt or 1 cup buttermilk
1 container whipped topping
1 pkg instant pudding mix (french or vanilla)
*you can choose to make it healthy (sugar free, fat free) or not
*double or triple as needed

 Mix all ingredients together and chill for 1 hr. Serve with additional fudge striped cookies and some people do like to dip!!

As I was growing up a family friend, Jocelin, made this. She never told us how much of what to use, so my mom and I tried and tried till we got it down to this. I hope you all adjust it to what you might like. I have tried it with pineapple which is great.

Chocolate Chip Cookies

This is my melt in your mouth chocolate chip cookies. They are seriously amazing!


4 1/2 cup flour
1 1/2 cup brown sugar
1/2 cup sugar
2 cups softened butter
2 teaspoon vanilla

2 teaspoon baking soda
2 packages instant vanilla pudding (large packages)

4 eggs
4 cups chocolate chips ( I use milk chocolate -- it tastes better!)

Bake 350 for 13 min. They will look like they are not done but they are. They should be a barely brown. Just let them set.
