Hearty Beef Chili

This is so far my favorite chili recipe! I found it in Fitness magazine... so calories, fat and all the good stuff is really light and easy! In fact, it serves 10.... and the servings are only 176 calories!!!! Yummy chili!

28 ounces diced tomatoes, undrained
10 ounces chopped tomatoes and green chile peppers, undrained
2 cups vegetable juice, or tomato juice
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon dried oregano, crushed
3 garlic clove, minced
1 1/2 pounds beef stew meat or pork stew meat
2 cups chopped onion
1 1/2 cups chopped celery
1 cup green bell pepper, chopped
30 ounces black beans, kidney beans or chick peas, rinsed and drained
Reduce fat cheddar, low fat sour cream and cilantro, optional

Combine tomatoes, juice and spices. Mix in meat onion, celery and pepper. Cover and cook on low for 8 to 10 hours or high for 4 to 5 hours. Stir in beans, then cover and cook for 15 minutes more. Ladle chili into bowl. Garnish with cheese, sour cream and cilantro, if desired.
