This is the bomb!!!! I don't know if I mean literally or just figuratively.... because you can spice it up as much as you want. I don't normally like Spanish rice or refried beans... I completely pass on them when we eat at any restaurant.... but this is the first Spanish Rice recipe I have ever liked! So I hope you enjoy as much as I do.
3/4 cup rice
1/2 pound hamburger, cooked and drained
1 stalk celery, chopped
45 ounces tomato juice
chili powder, to taste
hot sauce, to taste
jalepeno hot sauce, to taste
garlic, to taste
tabasco sauce, to taste
celery seed, to taste
Combine rice, hamburger and celery in saucepan. Add water until covered. Cook until rice swells. Add spices to taste. Then add tomato juice. Add more spices. Simmer until rice is plump, but still moist.
(PS The recipe is thanks to my mother-in-law Alice Mayer!)
